Inji Puli brings ginger warmth, tamarind tang and jaggery sweetness to the plate. Roasted ginger and reduced tamarind give it a thick, jam-like texture without artificial thickeners.

This homemade preparation uses unrefined jaggery and aged tamarind, without synthetic vinegar. Serve a small spoonful alongside rice or make it part of a Kerala sadya. Use a clean, dry spoon when serving.
